Seasoned cabbage and Snapper

Found this cabbage recipe while I was spending many hours scrolling down Pinterst.  The only reason I tried was because I had half of a cabbage sitting in my fridge and didn't know what to do with it!




Snapper Fish
Marinate fish in lemon juice, parsley, dill, crushed red peppers, and pepper. I slow cooked this on the stove.

Cabbage
Cut cabbage into four pieces.  Add olive oil, soy sauce, parsley, dill, lemon juice, and any other seasonings you really like.  Loosely wrap in foil and bake for 20 minutes on 425.

Tofu/Black Bean Salad

Hey everyone!  I made this dish really quick in between my classes.  I made black beans the night before and decided to throw them in.  I LOVE black beans and they always add a bunch of flavor to whatever you cook - even a salad!



Tofu
Heat olive oil on skillet and add the sliced tofu.  Add salt & soy sauce.  I like to cook it until its a bit hard on the outsides.

Salad
Romaine, avocado, red onion, tomato, black beans, tiny bit of soy sauce, fresh lemon juice, pepper, and tiny bit of garlic salt(TINY BIT).  Mix up the salad and toppings to make sure the seasonings hit every inch of the salad. 

And done! A quick in between class meal besides a burger or burrito.

S.O.S = Shrimp on Salad

Made this dish after a late night on campus.  It's the perfect quick fix if you want something fast, filling, and healthy!




Shrimp
Place frozen whole shrimp on hot skillet with olive oil.  Then add fresh lemon,crushed peppers, parsley, black pepper, and a little bit of garlic salt.  Don't add too much garlic salt!  If you do it will take over the flavor of everything else you've added.  
Let cook all the way through and mix around often to make sure nothing burns and the seasonings get through to under the shell.

Salad
Romaine lettuce +Fresh lemon juice, a little soy sauce, tomatoes, avocado, pepper, and red onions.

Seared Ahi Tuna Salad

This dish has always been one of my favorites when eating out, so when I learned that I could make it myself I had to try it.  I couldn't believe how easy and fast it was and how good it tasted!  Hopefully you try it too!  Word of advice: when buying this from the seafood section, don't buy the tuna that's sitting out, ask the butcher to cut you a fresh piece and pack it for you.  Just to be on the safe side :)



Ahi Tuna
Marinate in lemon juice, soy sauce, and various seasonings of your choice.  I only used pepper and a tiny bit of garlic salt.  Place on hot skillet for 2.5 minutes on each side.

Salad
Just added a little bit of soy sauce, lemon juice, red onion, and pepper to my romaine lettuce.

Salmon, Fried Egg, and Garlic Rice



Garlic Rice
Put minced garlic in a sauce pan with heated olive oil.  Before the garlic gets too brown add lightly salted rice.

Fried Egg
Fry..the..egg.. hehe


Salmon
Lemon, Green Onion, Red Onion, 
Red Crushed Peppers, Black Pepper, Olive Oil, Soy Sauce, and Zucchini. Then Bake on 350 until cooked. I honestly don't measure how much of anything I add, just do what feels right :)
